How it's cooked (8 steps)
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the kielbasa and cook, stirring occasionally, until deeply browned on both sides, 5-6 minutes. Transfer to a plate.
- Reduce the heat to medium. Add the onion and bell pepper to the drippings and cook, stirring occasionally, until softened and lightly golden at the edges, 5-6 minutes.
- Add the garlic, smoked paprika, and red pepper flakes; cook, stirring constantly, until fragrant, about 1 minute.
- Add the cannellini beans and chicken broth, scraping up any browned bits from the bottom of the pan.
- Return the kielbasa to the skillet along with the salt and pepper. Bring to a simmer and cook, stirring occasionally and lightly mashing a few beans against the side of the pan to thicken the broth, until the sauce is slightly reduced and creamy, 8-10 minutes.
- Stir in the spinach a handful at a time and cook until just wilted, about 2 minutes.
- Remove the skillet from the heat. Stir in the butter and lemon juice until the butter melts and the sauce turns glossy; taste and add more salt if needed.
- Divide among bowls, top with parsley, and serve hot.
