How it's cooked (8 steps)
- In a large bowl, whisk together 2 tablespoons of the olive oil, the lemon zest and juice, garlic, oregano, 1/2 teaspoon of the salt, and the pepper. Add the chicken pieces and toss to coat evenly; let marinate at room temperature for 20 minutes (or cover and refrigerate up to 8 hours).
- Toward the end of marinating, preheat the oven to 425°F with a rack in the center position.
- On a large rimmed sheet pan, toss the zucchini, cherry tomatoes, and red onion with the remaining 1 tablespoon olive oil and remaining 1/2 teaspoon salt; spread in an even layer.
- Roast the vegetables alone until the tomatoes begin to blister and the zucchini is just starting to soften and turn golden at the edges, 10-12 minutes.
- Remove the pan from the oven and push the vegetables to the edges. Lift the chicken from the marinade, letting excess drip off, and nestle the pieces in the center of the pan in a single layer; discard the remaining marinade. Scatter the olives over the vegetables.
- Return the pan to the oven and roast until the chicken is opaque throughout and reaches an internal temperature of 165°F and the vegetables are tender and lightly charred, 15-18 minutes.
- Remove the pan from the oven and let the chicken rest on the pan for 5 minutes so the juices settle back in.
- Scatter the crumbled feta and chopped parsley over the top and serve directly from the pan.
