How it's cooked (8 steps)
- In a medium bowl, toss the chicken thigh pieces with 2 tablespoons of the olive oil, 2 tablespoons of the lemon juice, garlic, oregano, 1/2 teaspoon of the salt, and the pepper. Cover and marinate at room temperature 20 minutes (or refrigerate up to 8 hours).

- Flip and cook until the second side is browned and an instant-read thermometer reads 165°F, 3-4 minutes more. Transfer to a plate to rest 5 minutes.
- Pour the dressing over the salad and toss to coat evenly.
- Divide the dressed salad among four bowls, top each with the seared chicken and crumbled feta, and serve.
