How it's cooked (9 steps)

  1. Pat the cod fillets dry, season all over with the salt and pepper, then dredge in 2 tablespoons of the cornstarch, shaking off the excess.
  2. Heat the vegetable oil in a large nonstick or cast-iron skillet over medium-high heat. Add the cod and sear undisturbed until deeply golden and a crust forms on the first side, 3 to 4 minutes.
  3. Flip and sear the second side until golden and the fish flakes easily with a fork and reaches 145°F internally, 2 to 3 minutes; transfer the cod to a plate.
  4. Reduce the heat to medium, add the garlic and ginger to the same skillet, and sauté until fragrant, about 45 seconds.
  5. Whisk the remaining 1 tablespoon cornstarch with the water in a small bowl until smooth.
  6. Pour the cornstarch slurry into the skillet along with the soy sauce, honey, rice vinegar, toasted sesame oil, and red pepper flakes; stir to combine.
  7. Bring to a simmer and cook, stirring often, until the glaze thickens and coats the back of a spoon, 2 to 3 minutes.
  8. Nestle the cod back into the glaze, spooning it over the fillets, and simmer until heated through and the edges of the glaze just start to caramelize, 1 to 2 minutes.
  9. Plate the cod, spoon the remaining glaze over the top, and finish with the sliced green onions and toasted sesame seeds.
