How it's cooked (7 steps)

  1. Pat the salmon fillets dry and season all over with the salt and pepper; let sit at room temperature while you make the glaze.
  2. In a small saucepan, whisk together the gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer over medium heat and cook, stirring often, until glossy and slightly thickened, 3-4 minutes. Remove from heat and set aside about half the glaze in a small bowl for serving.
  3. Heat the oil in a large ovenproof skillet over medium-high heat until shimmering. Lay the salmon skin-side down and sear undisturbed until the skin is deeply golden and crisp, 4-5 minutes.
  4. Flip the fillets and sear the flesh side until lightly browned, about 1-2 minutes, then remove the skillet from the heat.
  5. Brush the top of each fillet generously with the remaining glaze in the pan.
  6. Position an oven rack 6 inches from the broiler element and heat the broiler to high. Broil the salmon until the glaze is bubbling and lightly charred at the edges and the fish reaches 125°F in the thickest part for a moist, just-set center, 3-4 minutes.
  7. Let the salmon rest 2 minutes, then scatter with the scallions and sesame seeds and serve with the reserved glaze on the side.
