How it's cooked (8 steps)
- Pat the halibut fillets dry with paper towels, then season both sides with salt and pepper; let sit at room temperature for 15 minutes to take the chill off.
- Dust the fillets lightly with flour on both sides, tapping off the excess.
- Heat the oil in a large stainless steel or cast iron skillet over medium-high heat until shimmering. Add the fillets presentation-side down and sear undisturbed until deeply golden and a crust releases easily from the pan, 4-5 minutes.
- Flip carefully and sear the second side until the fish flakes easily and reaches 130-135F in the center for a moist, medium doneness, 3-4 minutes more. Transfer to a plate and tent loosely with foil.
