How it's cooked (9 steps)
- Pat the salmon fillets very dry with paper towels, especially the skin, and season both sides with 1 tsp salt and the pepper.
- Heat the oil in a large nonstick skillet over medium-high heat until shimmering, about 2 minutes.
- Lay the salmon skin-side down in the hot oil, pressing gently with a spatula for the first 10 seconds to keep it flat, and cook undisturbed until the skin is deeply golden and crisp and releases easily from the pan, 5-6 minutes.
- Flip and cook the flesh side until an instant-read thermometer reads 125-130 F for medium (145 F if you prefer well-done), 2-3 minutes, then transfer to a plate, skin-side up.
- Reduce the heat to medium, add 1 tablespoon of the butter to the skillet, and cook the garlic until fragrant, about 30 seconds.
- Pour in the wine, scraping up the browned bits, and simmer until reduced by about half, 1-2 minutes.
- Add the chicken broth and lemon juice and simmer until slightly thickened, 2-3 minutes.
