How it's cooked (9 steps)

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package directions until al dente, 7 to 8 minutes. Drain, reserving 1/2 cup of the pasta water, and set the noodles aside.
  2. Melt 1 tablespoon of the butter in a large skillet or Dutch oven over medium-high heat. Add half the mushrooms in a single layer and cook undisturbed until deeply browned on the first side, 4 to 5 minutes, then stir and cook until browned all over and any released liquid has evaporated, 3 to 4 minutes more. Transfer to a bowl and repeat with another tablespoon of butter and the remaining mushrooms.
  3. Melt the remaining tablespoon of butter in the same skillet over medium heat. Add the onion and 1/2 teaspoon of the salt; cook, stirring occasionally, until softened and translucent, 4 to 5 minutes. Add the garlic, tomato paste, and paprika; cook, stirring constantly, until the tomato paste darkens slightly and smells toasty, about 1 minute.
  4. Sprinkle the flour over the onion mixture and cook, stirring constantly, until no raw flour smell remains, about 1 minute.
  5. Whisking constantly, pour in the vegetable broth, soy sauce, and Dijon mustard. Bring to a simmer and cook, stirring often, until the sauce thickens enough to coat the back of a spoon, 3 to 4 minutes.
  6. Return the browned mushrooms and any accumulated juices to the skillet. Reduce heat to low and simmer until the mushrooms are heated through and the sauce is glossy, about 2 minutes.
  7. Remove the skillet from the heat. Stir in the sour cream until smooth, then taste and season with the remaining salt and the black pepper.
  8. Add the drained noodles to the skillet and toss to coat, loosening with a splash of the reserved pasta water if the sauce is too thick.
  9. Divide among bowls and top with the fresh dill.
