How it's cooked (8 steps)

  1. Heat the oven to 425 F and line a large rimmed sheet pan with parchment paper. Halve the cherry tomatoes, thinly slice the red onion and jalapenos, dice the avocado, and roughly chop the cilantro; keep each separate and set aside.
  2. Warm the olive oil in a small skillet over medium heat. Add the black beans, cumin, chili powder, and 1/2 tsp of the salt, and cook, stirring occasionally, until the beans are warmed through and lightly glazed, 3-4 minutes. Remove from the heat.
  3. Spread the tortilla chips in a single, even layer over the prepared sheet pan, avoiding a deep pile so every chip has a chance at toppings.
  4. Scatter the seasoned black beans evenly over the chips, then sprinkle the Monterey Jack and cheddar over everything corner to corner so no chip is left bare.
  5. Bake until the cheese is fully melted and just beginning to bubble at the edges, 6-8 minutes.
  6. Remove the pan from the oven and immediately scatter the cherry tomatoes, red onion, and jalapenos over the hot cheese so they warm slightly and soften at the edges.
  7. Dot the nachos with the diced avocado and drop small spoonfuls of the sour cream evenly across the top.
  8. Scatter the cilantro over the top, season with the remaining 1/4 tsp salt, and serve immediately with lime wedges alongside for squeezing.
