How it's cooked (9 steps)
- Toss the chicken with the chili powder, cumin, and 1/2 teaspoon of the salt in a medium bowl until evenly coated.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned on the outside and cooked through to 165°F, 6-7 minutes. Transfer to a plate.
- Add the remaining 1 tablespoon oil to the same skillet over medium heat. Add the bell pepper and onion and cook, stirring occasionally, until softened and lightly charred at the edges, 5-6 minutes.
- Stir in the garlic and cook until fragrant, about 30 seconds.
- Return the chicken to the skillet with the remaining 1/2 teaspoon salt and toss to combine with the vegetables; remove from heat and wipe out the skillet.
- Lay the tortillas on a work surface. Scatter 1/4 cup of the cheese over half of each tortilla, top with a quarter of the chicken mixture and another 1/4 cup cheese, then fold the empty half over the filling to close.
- Spread a thin, even layer of the softened butter over both outer sides of each folded quesadilla.
- Set the skillet over medium heat. Working in batches of two, cook the quesadillas until the tortilla is deeply golden and crisp and the cheese is fully melted, 3-4 minutes per side.
- Transfer to a cutting board, let rest 1 minute so the cheese sets slightly, then cut each into 3 wedges. Serve hot with the cilantro, lime wedges, and sour cream.
