How it's cooked (10 steps)

  1. Take the chicken out of the refrigerator 30 minutes before cooking so it roasts more evenly. Pat it completely dry inside and out with paper towels, then season generously all over and inside the cavity with the salt and pepper.
  2. Preheat the oven to 425°F. In a small bowl, mash 2 smashed garlic cloves with 1 tablespoon of the olive oil, the zest of 1 lemon, 1 teaspoon of the oregano, and the softened butter into a paste.
  3. Loosen the skin over the chicken breast with your fingers and rub half the herb butter directly under the skin. Rub the remaining herb butter over the outside of the skin.
  4. Halve both lemons. Stuff the cavity with the lemon halves, the remaining 4 garlic cloves, and 4 rosemary sprigs. Tie the legs together with kitchen twine and tuck the wing tips under the body.
  5. Toss the potatoes and onion wedges in a roasting pan with the remaining 3 tablespoons olive oil, the remaining 2 teaspoons oregano, and a generous pinch of salt and pepper. Push the vegetables to the edges of the pan and set the chicken breast-side up in the center. Pour the chicken broth into the bottom of the pan and scatter the remaining 2 rosemary sprigs over the vegetables.
  6. Roast until the skin is deeply golden and an instant-read thermometer inserted into the thickest part of the thigh reads 165°F, 70-80 minutes, stirring the potatoes once at the halfway point so they brown evenly.
  7. If the skin isn't yet deeply golden by the time the chicken hits temperature, run it under the broiler for 2-3 minutes, watching closely, to finish browning.
  8. Transfer the chicken to a cutting board and tent loosely with foil. Let it rest 15 minutes so the juices redistribute before carving — this is what keeps the breast meat juicy instead of dry.
  9. While the chicken rests, return the roasting pan (potatoes and onions still in it) to the still-warm oven to keep hot.
  10. Carve the chicken, discarding the spent lemons and rosemary from the cavity. Squeeze the juice from one of the roasted lemon halves over the carved meat and the potatoes, then serve everything together straight from the pan.
