How it's cooked (9 steps)

  1. In a medium bowl, toss the chicken thighs with 1 tablespoon of the soy sauce, the dry sherry, and 1 teaspoon of the cornstarch; let marinate at room temperature for 15 minutes so the coating locks in juice as the chicken cooks.
  2. Meanwhile, in a small bowl, whisk the remaining 1 tablespoon soy sauce, the rice vinegar, brown sugar, chicken broth, and remaining 1 teaspoon cornstarch until smooth; set the sauce aside.
  3. Heat 2 tablespoons of the oil in a large wok or 12-inch skillet over high heat until shimmering. Add the marinated chicken in a single layer and sear undisturbed until deeply golden on the first side, 2-3 minutes.
  4. Flip the chicken and stir-fry until no longer pink and cooked through to 165 F, 2-3 minutes more; transfer to a plate.
  5. Add the remaining 1 tablespoon oil to the wok. Add the garlic, ginger, and chiles; stir-fry until fragrant and the chiles just begin to blister, 45-60 seconds.
  6. Add the bell pepper and scallion whites; stir-fry until crisp-tender, about 2 minutes.
  7. Return the chicken and any accumulated juices to the wok, pour in the sauce, and toss everything to combine.
  8. Cook, tossing constantly, until the sauce thickens to a glossy coat on everything, 1-2 minutes.
  9. Remove from the heat, stir in the scallion greens and sesame oil, and serve immediately over rice.
