How it's cooked (7 steps)
- Rinse the rice under cold water until the water runs clear, then combine with the water in a small saucepan. Bring to a boil, cover, reduce heat to low, and simmer until tender, 15 minutes. Remove from heat and let stand, covered, 5 minutes, then fluff with a fork.
- Meanwhile, whisk the soy sauce, mirin, brown sugar, rice vinegar, and cornstarch in a small bowl until the sugar and cornstarch dissolve; set the sauce aside.

- Whisk the sauce again to recombine the cornstarch, pour it over the turkey, and simmer, stirring, until it thickens into a glossy glaze that coats the meat, 1 to 2 minutes.
- Remove the skillet from the heat and stir in the sesame oil; season with the salt.
- Divide the rice among bowls, top with the teriyaki turkey, and sprinkle with the sesame seeds and reserved scallion greens.
