How it's cooked (7 steps)

  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar until the sugar dissolves; set the sauce aside.
  2. Heat 1 tablespoon of the vegetable oil in a large nonstick skillet or wok over medium-high heat until shimmering. Add the ground turkey and cook undisturbed for 2 minutes to let it brown, then break it into small crumbles with a spatula and continue cooking, stirring occasionally, until no pink remains and the turkey reaches 165°F internally, 5-6 minutes more. Transfer the turkey to a bowl and set aside.
  3. Add the remaining 1 tablespoon oil to the same skillet and reduce the heat to medium. Add the onion and cook, stirring occasionally, until softened and translucent, 3-4 minutes.
  4. Add the garlic, ginger, and the white parts of the green onions; cook, stirring constantly, until fragrant, about 1 minute.
  5. Add the coleslaw mix in two batches, tossing with tongs to wilt the first batch before adding the second, until the cabbage is glossy and tender-crisp, 4-5 minutes.
  6. Return the browned turkey to the skillet along with the reserved sauce, salt, and pepper. Toss everything together and cook, stirring, until the sauce coats the cabbage and turkey and everything is heated through, 2-3 minutes.
  7. Taste and season with more salt if needed. Divide the egg roll bowl among plates or bowls and top with the green parts of the scallions and the toasted sesame seeds.
