How it's cooked (10 steps)
- In a small bowl, stir together the Greek yogurt, 1 tablespoon of the lemon juice, and a pinch of the salt; set aside as the sauce.
- Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the ground turkey in an even layer and let it sear undisturbed until deeply browned on the bottom, about 4 minutes, then break it into crumbles and cook until no longer pink and an instant-read thermometer reads 165 F, 2-3 minutes more. Transfer the turkey to a bowl.
- Add the remaining tablespoon of olive oil and the onion to the same skillet; saute over medium heat, scraping up the browned bits, until softened and caramelized at the edges, 6-7 minutes.
- Add the garlic and cook, stirring, until fragrant, about 30 seconds.
- Stir in the cumin, smoked paprika, coriander, cinnamon, allspice, and cayenne; toast, stirring constantly, until fragrant, about 45 seconds.
- Return the turkey to the skillet along with the remaining salt and the black pepper; stir to coat evenly and cook until heated through, about 2 minutes.
- Remove the skillet from the heat and stir in the remaining lemon juice.
- Scatter the halved cherry tomatoes over the turkey.
