How it's cooked (8 steps)
- Make the quick pickled onions first: in a small bowl, combine the sliced red onion, vinegar, sugar, and 1/4 teaspoon of the salt. Toss well and set aside to pickle while you prep everything else, at least 20 minutes.
- In a medium bowl, toss the chicken with 2 tablespoons of the olive oil, half the garlic, the cumin, smoked paprika, turmeric, cinnamon, 3/4 teaspoon of the remaining salt, and the pepper until every piece is coated. - While the rice cooks, whisk together the yogurt, lemon zest, half the lemon juice, and the remaining garlic in a small bowl; season with a pinch of salt and set aside.
- Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer and sear undisturbed until deeply golden on the first side, 4-5 minutes.
- Flip the chicken and continue cooking, stirring occasionally, until browned on the second side and cooked through to 165°F, 4-5 minutes more.
- Toss the cucumber with the remaining lemon juice and a pinch of salt in a small bowl.
- Divide the rice among bowls and top with the shawarma chicken, pickled onions, dressed cucumber, and a generous drizzle of the garlic-lemon yogurt sauce. Serve.
