How it's cooked (8 steps)

  1. Pound the chicken breasts between sheets of plastic wrap to an even 3/4-inch thickness; season all over with the salt and pepper and let stand at room temperature 20 minutes while you make the glaze.
  2. In a small saucepan, combine the balsamic vinegar, honey, brown sugar, garlic, and rosemary. Bring to a boil, then reduce to a simmer and cook, whisking occasionally, until reduced by half and syrupy enough to coat the back of a spoon, 12-15 minutes.
  3. Remove the glaze from the heat and divide it between two small bowls: one for basting the raw chicken as it grills, one kept clean to drizzle over the finished chicken.
  4. Meanwhile, heat a gas or charcoal grill to medium-high (about 450F) and scrape the grates clean; oil the grates by rubbing them with a paper towel dipped in the neutral oil.
  5. Rub the chicken breasts all over with the olive oil. Grill over direct heat, without moving, until well-marked and released easily from the grates, 5-6 minutes.
  6. Flip the chicken and brush with the basting glaze; continue grilling, flipping and brushing once more, until an instant-read thermometer inserted in the thickest part reads 165F, 8-10 minutes more.
  7. Transfer the chicken to a platter, tent loosely with foil, and rest 5 minutes.
  8. Drizzle the rested chicken with the reserved clean glaze and serve.
