How it's cooked (7 steps)
- In a small bowl, stir together the Greek yogurt, half of the diced cucumber, 1 minced garlic clove, 1 tablespoon of the dill, 1 tablespoon of the olive oil, and 1 tablespoon of the lemon juice; season with 1/4 teaspoon of the salt. - In a large bowl, combine the ground chicken, panko, egg, half of the grated onion, the remaining 3 minced garlic cloves, the dried oregano, the remaining 2 tablespoons of dill, the feta, 1/2 teaspoon of the salt, and the black pepper. Mix gently with your hands just until combined — overmixing makes the meatballs dense — then form into 16 meatballs, about 1 1/2 tablespoons each.
- Heat the remaining 2 tablespoons of olive oil in a large nonstick skillet over medium-high heat. Working in batches so you don't crowd the pan, sear the meatballs until deeply golden on the first side, 3-4 minutes, then turn and cook, turning occasionally, until browned all over and cooked through to 165°F at the center, 8-10 minutes total.
- In a small bowl, toss the remaining sliced cucumber and remaining grated onion with the remaining lemon juice and a pinch of salt; season to taste. This quick salad brightens each bowl.
- Fluff the rice with a fork and stir in any remaining lemon juice to taste.
- Divide the lemon rice among four bowls. Top each with four meatballs, a scoop of the cucumber salad, a generous dollop of tzatziki, and a sprinkle of extra feta. Serve right away.
