How it's cooked (9 steps)

  1. Bring a large pot of generously salted water to a boil. Add the spaghetti and cook according to package directions until al dente, 9-11 minutes. Reserve 1 cup of the pasta water, then drain.
  2. Meanwhile, combine the sugar and water in a small saucepan over medium-high heat. Cook without stirring, swirling the pan occasionally, until the mixture turns deep amber and smells faintly of caramel, 5-7 minutes.
  3. Remove the caramel from the heat and carefully whisk in the fish sauce — it will bubble and sputter. Return to low heat and stir until smooth, about 1 minute; set aside.
  4. Heat a large skillet or wok over high heat. Add the ground pork and cook, breaking it into small crumbles with a spoon, until deeply browned and no longer pink, 6-8 minutes.
  5. Add the garlic, ginger, shallots, and chile to the pork; cook, stirring constantly, until fragrant and the shallots have softened, about 2 minutes.
  6. Pour in the fish sauce caramel and the scallion whites; bring to a simmer and cook, stirring often, until the pork is glossy and the sauce has thickened slightly, 3-4 minutes.
  7. Add the drained spaghetti to the skillet with a splash of the reserved pasta water. Toss vigorously over medium heat until the pasta is evenly coated and glossy, adding more pasta water as needed to loosen the sauce, 1-2 minutes.
  8. Remove the skillet from the heat and stir in the butter and lime juice until the butter melts into the sauce and it turns silky. Season with the salt and black pepper to taste.
  9. Divide the pasta among bowls and top with the scallion greens, cilantro, and chopped peanuts.
