How it's cooked (7 steps)
- Heat the oven to 425°F and line a rimmed baking sheet with foil. Toss the potato fries with the olive oil, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper, then spread in a single layer with space between pieces.
- Roast the fries on the bottom oven rack until the undersides are deeply golden, 20-22 minutes.
- Meanwhile, set up a breading station: put the flour in one shallow dish, the beaten eggs in a second, and the panko mixed with the smoked paprika, Parmesan, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon pepper in a third.
- Season the cod fillets on both sides, then dredge each in flour and shake off the excess, dip in egg, and press firmly into the panko mixture to coat all sides.
- Pull out the baking sheet, flip the fries, and push them to the edges to make room. Nestle the breaded cod in the center, mist the tops lightly with cooking spray, and return to the oven.
