How it's cooked (7 steps)
- Heat the oil in a large Dutch oven or heavy pot over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes. Add the garlic and cook until fragrant, about 30 seconds.
- Add the ground beef and beef broth together, breaking the beef into fine crumbles with a wooden spoon as it cooks directly in the liquid — this keeps the texture silky rather than clumped, the hallmark of real Cincinnati chili. Cook, stirring constantly, until the beef is cooked through (160°F) and the broth is simmering, about 5 minutes.
- Stir in the tomato sauce, chili powder, cocoa powder, cinnamon, allspice, cloves, vinegar, Worcestershire sauce, and salt. Bring to a boil.
- Reduce the heat to low, partially cover, and simmer, stirring occasionally, until the chili is deep reddish-brown, silky, and thickened to a ladle-able consistency, about 60 minutes.
- About 12 minutes before the chili finishes, bring a large pot of generously salted water to a boil. Add the spaghetti and cook, stirring occasionally, until al dente, 10-11 minutes. Drain.
- Taste the chili and season with more salt if needed.
- Divide the spaghetti among bowls and ladle the chili over. Top each bowl with a generous heap of shredded cheddar and serve immediately.
