How it's cooked (8 steps)
- In a large bowl, whisk together 1/3 cup of the yogurt, 1 tablespoon of the lemon juice, 3 cloves of the minced garlic, the ginger, garam masala, smoked paprika, and 3/4 teaspoon of the salt.
- Add the chicken and toss to coat. Marinate at room temperature 20 minutes, or cover and refrigerate up to 8 hours.
- Meanwhile, make the mint yogurt sauce: in a small bowl, combine the remaining yogurt, 1 tablespoon of the lemon juice, the remaining garlic clove, 6 tablespoons of the mint, and a pinch of salt. Cover and refrigerate until serving.
- In a medium bowl, toss the cabbage, carrot, red onion, the remaining 2 tablespoons mint, the remaining 1 tablespoon lemon juice, and 1/4 teaspoon salt. Set aside to soften while the chicken cooks.
- Heat the oil in a large skillet over high heat until shimmering. Add the chicken in a single layer and sear undisturbed until deeply charred on the first side, 4-5 minutes.
- Flip and cook until charred on the second side and cooked through to 165°F, 4-5 minutes more. Transfer to a plate, tent with foil, and rest 5 minutes.
- Warm the tortillas directly over a gas flame or in a dry skillet over medium heat, 20-30 seconds per side, until pliable and lightly charred in spots.
- Spread each tortilla with mint yogurt sauce, top with the chicken and slaw, roll into a wrap, and serve immediately with any remaining sauce on the side.
