How it's cooked (6 steps)
- In a large bowl, whisk together 3/4 cup of the yogurt, the olive oil, 3 cloves of the garlic, 2 tablespoons of the lemon juice, the cumin, coriander, paprika, turmeric, cinnamon, cayenne, 2 teaspoons of the salt, and the black pepper until smooth.
- Add the chicken to the marinade and turn to coat completely, then cover and refrigerate for at least 2 hours and up to 12 hours, turning once halfway through, until the edges look opaque and the marinade smells fragrant with spice.
- While the chicken marinates, stir together the remaining 1/4 cup yogurt, the remaining garlic clove, the remaining 1 tablespoon lemon juice, and the remaining 1/2 teaspoon salt in a small bowl to make the garlic-yogurt sauce; cover and refrigerate until serving.
- About 30 minutes before grilling, thread the marinated chicken and the red onion chunks onto skewers, alternating chicken and onion, then let the skewers stand at room temperature while the grill heats.
- Heat a grill or grill pan to medium-high (about 450°F) and oil the grates, then grill the skewers, turning every 2 to 3 minutes, until deeply charred in spots and the chicken reaches 165°F at the center, 10 to 12 minutes total.
- Transfer the skewers to a platter, sprinkle with the parsley, and serve hot with the garlic-yogurt sauce alongside.
