How it's cooked (7 steps)
- In a large bowl or zip-top bag, whisk together the olive oil, 2 tablespoons of the lemon juice, 3 of the minced garlic cloves, the oregano, 1 teaspoon of the salt, and the pepper. Add the chicken thighs and turn to coat well. Cover and refrigerate for at least 30 minutes and up to 4 hours.
- Meanwhile, stir together the yogurt, half the cucumber (grated and squeezed dry), the remaining garlic, the remaining 1 tablespoon lemon juice, the dill, and the remaining 1/4 teaspoon salt in a small bowl. Cover and refrigerate until ready to serve; the tzatziki only gets better as it sits.
- Heat a large grill pan or heavy skillet over medium-high heat until shimmering. Lift the chicken from the marinade, letting the excess drip off, and sear until deeply golden and releasing easily from the pan, 5 to 6 minutes per side, until an instant-read thermometer reads 165°F at the thickest part.
- Transfer the chicken to a cutting board and let it rest 5 minutes, then slice against the grain into thin strips.
- Wipe out the pan and warm the flatbreads directly in it over medium heat, 20 to 30 seconds per side, until pliable and lightly charred in spots.
- Spread a generous layer of tzatziki over each warm flatbread, then top with the sliced chicken, lettuce, tomato, red onion, and the remaining diced cucumber.
- Drizzle with a little more tzatziki, fold or roll the flatbreads, and serve right away while the chicken is warm.
