How it's cooked (9 steps)
- Whisk together the soy sauce, brown sugar, grated apple, garlic, ginger, sesame oil, and black pepper in a large bowl.
- Add the chicken to the marinade, toss to coat completely, cover, and refrigerate at least 30 minutes and up to 4 hours.
- Toss the cucumber with the rice vinegar and 1/4 teaspoon of the salt in a small bowl; set aside to quick-pickle while the chicken marinates.
- Heat 1 tablespoon of the vegetable oil in a large skillet or wok over high heat until shimmering. Lift half the chicken from the marinade with tongs, letting the excess drip back into the bowl, and reserve the remaining marinade.
- Add the lifted chicken to the skillet in a single layer and sear undisturbed until deeply browned on the first side, 3-4 minutes; flip and cook until the second side is browned and the chicken reaches 165°F, about 3 minutes more. Transfer to a plate.
- Repeat with the remaining 1 tablespoon oil and the rest of the chicken.
- Return all the chicken to the skillet, add the reserved marinade and the scallion whites, and cook, stirring, until the sauce reduces to a glossy glaze that coats the chicken, 2-3 minutes.
- Season with the remaining salt to taste.
- Divide the warm rice among bowls, top with the glazed chicken, quick-pickled cucumbers, scallion greens, and sesame seeds.
