How it's cooked (3 steps)
- Cook the beans with plenty of water until they are completely soft and beginning to break down into a mash, seasoning toward the end.
- For the sauce, slowly cook sliced onions in palm oil for a long time until they are caramelized and almost blackened, then add blended dried peppers and crayfish and continue cooking until the oil rises and the sauce is very dark and fragrant.
- Serve a large mound of the soft mashed beans topped generously with the peppery sauce.
