How it's cooked (8 steps)
- Put the beef in a heavy three-legged pot with the water, coarse salt and quartered onion. Bring to the boil, then simmer 3 hours over low heat until the meat surrenders completely and the bones slip free. Seswaa takes almost nothing but meat, water and salt - the restraint is the recipe.
- Strain, keeping 250 ml of the cooking liquid, and discard the bones and onion.
- Pound the hot meat in the pot with a wooden pestle for 10 minutes until it breaks into soft threads. It should shred, not mince.
- Moisten the pounded meat with the reserved cooking liquid and the butter or beef fat and stir it through. Check for salt; nothing else goes in.
- For the bogobe, bring the 1.5 litres of water to the boil with the salt. Note that Botswana's grain axis is sorghum and pearl millet rather than maize - this is what separates a Tswana plate from a Zimbabwean or Zambian one.
- Whisk in the sorghum and millet meals and cook 5 minutes, stirring, to make a smooth slurry.
- Cover and simmer 45 minutes over low heat, stirring every 10 minutes, until the porridge is thick, glossy and faintly sour-sweet from the sorghum. Serve alongside the seswaa.
- Substitutions: rendered beef fat can stand in for the butter.
