How it's cooked (8 steps)
- Put the maize kernels in a large pot with the water and 1 teaspoon of the salt and boil 25 minutes - fresh maize is the slowest thing in the pot and it goes in first.
- Add the potatoes and cook 12 minutes more, then add the peas and cook a final 8 minutes, until everything is tender and the potatoes are falling apart at the edges.
- Stir in the chopped pumpkin leaves and cook 4 minutes, just until they collapse. It is these greens that turn mukimo its characteristic green, not any addition of colour.
- Reserve 125 ml (1/2 cup) of the cooking liquid, then drain the pot well.
- Melt the butter in the empty pot over medium heat and soften the chopped onion 5 minutes.
- Return the drained vegetables to the pot with the remaining 1/2 teaspoon salt and mash hard with a wooden mwiko or a sturdy masher for 5 minutes. Mukimo is meant to be rough - leave whole maize kernels and pieces of pea intact rather than working it smooth.
- Loosen with the reserved cooking water a splash at a time until it holds its shape but is not stiff, and mound it on the plate. Serve with nyama choma or a beef stew.
- Substitutions: managu (African nightshade) can stand in for the pumpkin leaves.
