How it's cooked (7 steps)
- Whisk the grated papaya, garlic, ginger, lemon juice, half the oil, cumin, coriander, black pepper, paprika, pili pili, salt and tomato paste into a loose paste.
- Turn the beef cubes through the marinade until every piece is coated, cover, and refrigerate at least 4 hours and up to overnight. Do not go past 12 hours - the papaya enzyme keeps working and will turn the meat mealy.
- Take the beef out 30 minutes before cooking so it comes to room temperature, and thread 5 or 6 cubes onto each soaked bamboo or flat metal skewer, leaving a little space between pieces so the heat gets in.
- Build a hot charcoal fire and let it burn down to glowing coals with a light ash coat. Grill the skewers 8 to 10 minutes total, turning every 2 minutes, until the edges char and the centres are still pink.
- Baste with the remaining oil each time you turn them; the drips will flare, which is what puts the smoke on the meat.
- Rest the skewers 5 minutes on a warm plate, then serve with lime wedges and kachumbari.
- Substitutions: rump can stand in for the beef sirloin; 1/2 tsp cayenne can stand in for the pili pili powder.
