How it's cooked (6 steps)
- Pour boiling water over the poppy seeds to cover and leave them 30 minutes, then drain through a fine sieve lined with muslin and press out the water.
- Grind the drained seeds twice through a poppy mill or the finest plate of a meat grinder, until they turn from black specks into a grey, oily, spreadable paste that smells of almonds. This is the step people skip and the reason their makówki taste of gravel: a blender spins the seeds around without breaking them, and unbroken poppy seed has no flavour.
- Warm the milk in a wide pan with the sugar, honey, butter, vanilla and lemon zest until the sugar dissolves, then bring to a bare simmer for 10 minutes.
- Stir in the poppy paste with the raisins, walnuts and almonds and cook 10 minutes more, stirring, until it is the thickness of loose porridge. It will tighten a great deal as it cools, so stop while it still slumps off the spoon.
- Layer the bread and the poppy mixture in a glass dish, starting and finishing with poppy, pressing each layer of bread down so it soaks.
- Cover and refrigerate at least 6 hours or overnight. The bread dissolves entirely and what you cut into the next day is dense, dark, sweet and faintly bitter. In Silesia this is the last of the twelve Christmas Eve dishes and it is eaten cold, straight from the fridge, for three days afterwards.
