How it's cooked (8 steps)
- Crumble the yeast into the lukewarm milk and leave it 10 minutes, until it foams.
- Put the flour, eggs, brown sugar, vanilla and salt in a bowl, pour in the yeasted milk, and knead 10 minutes to a stiff, smooth dough. This is a brioche dough, not a batter — that is the entire difference between a Liège waffle and the light, batter-poured Brussels waffle that most of the world means when it says Belgian waffle.
- Work the very soft butter in a little at a time, kneading between additions, until the dough is glossy and elastic. It will look broken and hopeless halfway through; keep going.
- Cover and prove at room temperature for 90 minutes, until roughly doubled.
- Knock the dough back and fold in the pearl sugar with a few turns only — just enough to distribute it. Belgian pearl sugar is compressed beet sugar in hard nuggets that survive the iron and then melt into pockets of caramel on the crust. Crushed sugar cubes and nib sugar dissolve into the dough instead and you get a plain sweet waffle. Order it from a Belgian or Dutch grocer; there is no substitute and the dish is built around it.
- Divide into eight balls of about 90 g and bake them within 15 minutes of adding the sugar — left to sit, the sugar draws water out of the dough and starts dissolving.
- Heat a waffle iron to 180-200°C and bake each ball for 4 to 5 minutes, until the outside is dark gold and the sugar that has escaped onto the plates has caramelised.
- Lift them off carefully — the escaped caramel is molten and sticks — and cool 10 minutes on a rack. They are eaten warm, in the hand, with nothing on them at all.
