How it's cooked (7 steps)
- Work the rye flour, plain flour, water, salt and softened butter into a very stiff dough and knead it 8 minutes. It should be firm enough to stand up by itself — this dough is a baking vessel as much as it is bread, and a slack one will burst.
- Rest the dough 30 minutes under a cloth, then roll two-thirds of it into an oval about 1.5 cm thick on a floured board. Keep the last third for the lid.
- Vendace are the small freshwater lake fish of eastern Finland and they are the dish. Buy them frozen from a Finnish or Baltic grocer if you cannot get them fresh; small perch or smelt is the honest local substitute, and sea fish is not — cod flakes apart and its bones will not soften.
- Lay the fish along the centre of the oval in a close row, season with half the salt and the pepper, cover with a layer of pork belly, then repeat: fish, salt, pork, building a loaf about 12 cm high.
- Bring the sides of the dough up over the pile, roll out the reserved dough for a lid, and seal the seams by pinching and then smoothing them with a wet hand. There must be no crack anywhere; brush the melted butter over the whole loaf to help it close.
- Bake at 250°C for 30 minutes to set and colour the crust, then drop the oven to 130°C, wrap the loaf loosely in foil, and bake a further 5 hours.
- Rest it wrapped in a cloth for 1 hour before cutting. Slice the top off like a lid and spoon out the filling with the crust: after six hours the pork fat has soaked into the rye and the fish bones have dissolved completely, so the whole thing is eaten, heads and all, and a kalakukko cut open too early is simply raw fish in a rye case.
