How it's cooked (6 steps)

  1. Boil the cauliflower florets in well-salted water for 6 to 8 minutes, until a skewer meets slight resistance at the stem. They must stay firm: this salad is topped up and eaten across days, and soft cauliflower turns to mush by the second night. Drain and spread the florets on a tray to steam dry and cool completely, about 20 minutes.
  2. Find papaccelle if you possibly can. They are the squat, ribbed Neapolitan peppers pickled in vinegar, sold in jars by Campanian delicatessens, and their particular sweet-sharp crunch is what the dish is built around. Roasted red peppers give you a sweeter, softer salad, which is a different thing.
  3. Whisk the vinegar with the olive oil and the black pepper until cloudy. Do not add salt: between the anchovies, the capers and the olives there is plenty.
  4. In a wide bowl, combine the cooled cauliflower with the papaccelle, both olives, the capers and the anchovies, and pour over the dressing. Turn everything over gently with your hands so the florets do not break.
  5. Cover and leave at cool room temperature for at least 4 hours, and better overnight, turning it once. The cauliflower has to take the vinegar on.
  6. The name means the salad of reinforcement: in Naples it appears on the table at Christmas Eve and is replenished, rinforzata, with more olives, peppers or cauliflower every day until Epiphany. Serve it at room temperature, never chilled.
