How it's cooked (8 steps)

  1. Heat the oil in a wide pan and cook the onion 6 minutes over medium heat until translucent.
  2. Add the garlic, ginger and green chilli and stir 2 minutes.
  3. Add all three diced peppers and cook 5 minutes over medium-high heat - they should soften but keep some bite.
  4. Stir in the curry powder and smoked paprika and let them toast 1 minute in the oil.
  5. Add the grated carrot and cook 3 minutes, tossing, until it starts to slump.
  6. Pour in the tinned tomatoes and simmer 10 minutes over medium heat until the sauce tightens.
  7. Fold in the baked beans and warm through 5 minutes without breaking them up.
  8. Season with the salt and sugar. Chakalaka is served warm or at room temperature beside pap, braai meat or bread.
