How it's cooked (7 steps)

  1. Heat the oven to 400°F. Halve the spaghetti squash lengthwise and scoop out the seeds. Brush the cut sides with 1 tablespoon olive oil and season with 1/2 teaspoon salt, then place cut-side down on a parchment-lined baking sheet. Roast until a fork pierces the skin easily and the flesh is tender, 40-45 minutes. Let rest 10 minutes, then scrape into strands with a fork.
  2. While the squash roasts, stir the panko and milk together in a small bowl and let sit until the milk is absorbed, about 5 minutes. In a large bowl, combine the turkey, panade, egg, 1/4 cup Parmesan, half the garlic, parsley, black pepper, and 1/4 teaspoon salt. Mix gently with your hands until just combined — overmixing makes the meatballs tough. Shape into 16 meatballs, about 2 1/2 tablespoons (1 1/2-inch) each.
  3. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the meatballs in batches until browned on all sides, 5-6 minutes per batch (they will not be cooked through); transfer to a plate.
  4. Reduce the heat to medium. Add the remaining garlic to the same skillet and cook, stirring, until fragrant, about 30 seconds. Add the tomato paste and cook, stirring, until it darkens slightly, 1-2 minutes.
  5. Stir in the crushed tomatoes and red pepper flakes and bring to a simmer. Nestle the meatballs and any accumulated juices back into the sauce. Cover and simmer until the meatballs reach 165°F and the sauce has thickened slightly, 12-15 minutes.
  6. Scatter the mozzarella over the meatballs, cover, and cook until melted, 2-3 minutes.
  7. Toss the spaghetti squash strands with the remaining Parmesan and season with salt to taste. Divide among bowls, top with the meatballs and sauce, scatter with torn basil and extra parsley, and serve.
