How it's cooked (10 steps)
- Position an oven rack 6 inches from the broiler and preheat. Arrange the tomatillos, poblanos, jalapeno, half the onion, and the unpeeled garlic cloves on a rimmed baking sheet. Broil, turning once, until the tomatillos are blistered and olive-green and the peppers are charred and blackened in spots, 8-10 minutes.
- Let the vegetables cool slightly, then peel the garlic and pull off the charred skins from the poblanos. Transfer the tomatillos, poblanos, jalapeno, roasted onion, garlic, and 1 cup of the broth to a blender; blend until mostly smooth.
- Heat the oil in a large Dutch oven over medium-high. Add the remaining chopped onion and cook until softened, 3-4 minutes.
- Add the ground turkey, breaking it up with a spoon, and cook until no longer pink and lightly browned in spots and the internal temperature reaches 165°F, 6-7 minutes.
- Stir in the cumin and oregano and cook until fragrant, about 30 seconds.
- Pour in the tomatillo salsa verde and the remaining 3 cups broth. Bring to a boil, then reduce to a simmer, cover partially, and simmer, stirring occasionally, until the chili has thickened slightly and the flavors have melded, 25 minutes.
- Whisk the masa harina with 3 tablespoons water to a smooth paste and stir it into the chili; simmer uncovered until thickened enough to coat the back of a spoon, 5-8 minutes.
- Stir in the beans and salt; simmer until heated through, about 5 minutes.
- Off the heat, stir in the juice of one lime and the cilantro; taste and adjust the salt.
- Ladle into bowls, garnish with more cilantro, and serve with the remaining lime cut into wedges.
