How it's cooked (9 steps)
- Press the tofu block between paper towels under a heavy pan for 15 minutes to force out excess water, then pat dry and cut into 3/4-inch cubes; toss the cubes with 1/2 teaspoon of the salt.
- In a small bowl, whisk together the soy sauce, vegetarian stir-fry sauce, brown sugar, cornstarch, and 2 tablespoons of the water until the sugar and cornstarch dissolve; set the sauce aside.
- Heat 2 tablespoons of the oil in a large nonstick or well-seasoned skillet over medium-high heat until shimmering. Add the tofu in a single layer and cook, turning every couple minutes, until deeply golden and crisp on most sides, 7-8 minutes total. Transfer the tofu to a plate.
- Add the green beans to the same skillet and stir-fry over high heat until blistered in spots and crisp-tender, 3-4 minutes.
- Push the beans to one side, add 1 tablespoon of the oil, the garlic, and jalapeños to the cleared space, and cook, stirring, until fragrant, 30-45 seconds, then stir everything together.
- Return the tofu to the skillet, pour in the sauce, and toss to coat; simmer, stirring often, until the sauce thickens into a glossy coat and no raw cornstarch taste remains, about 1-2 minutes.
- Remove the skillet from the heat and fold in the basil until just wilted; season with the remaining salt to taste.
- Wipe out the skillet, heat the remaining 1 tablespoon oil over medium-high heat, and fry the eggs sunny-side up until the whites are set and the edges are crisp but the yolks are still runny, 2-3 minutes.
- Divide the rice among four bowls, top with the basil tofu and green beans, and finish each bowl with a fried egg.
