How it's cooked (6 steps)
- In a large bowl, whisk together the gochujang, soy sauce, brown sugar, sesame oil, grated apple, garlic, ginger, and red pepper flakes until smooth.
- Add the pork to the marinade and toss to coat thoroughly. Cover and refrigerate at least 30 minutes, or up to overnight for deeper flavor.
- Heat 1 tablespoon of the vegetable oil in a large cast-iron skillet or wok over high heat until shimmering. Working in two batches so the pork sears instead of steams, cook until charred and caramelized at the edges, 3 to 4 minutes per batch; transfer to a plate.
- Add the remaining 1 tablespoon vegetable oil to the same skillet along with the onion and scallion whites. Cook over medium-high heat, stirring occasionally, until softened and lightly browned at the edges, 3 to 4 minutes.
- Return the pork and any accumulated juices to the skillet. Toss everything together and cook until the pork reaches 145°F internally and the sauce clings glossy to the meat, 2 to 3 minutes.
- Remove from heat, scatter with the scallion greens and toasted sesame seeds, and serve immediately over rice.
