How it's cooked (10 steps)
- Pat the turkey wings dry. In a small bowl, mix the salt, pepper, garlic powder, and smoked paprika, then rub all over the wings; let stand at room temperature 20 minutes while you prep the vegetables - this seasons the meat through instead of just the surface.
- Put 1/2 cup of the flour in a shallow dish. Dredge the seasoned wings in the flour, shaking off the excess, and reserve the dish (any leftover flour goes into the gravy later).
- Heat the oil in a large heavy pot or Dutch oven over medium-high heat until shimmering. Sear the wings in a single layer, working in batches so you don't crowd the pot, until deeply browned on both sides, 4-5 minutes per side. Transfer to a plate.
- Lower the heat to medium-low and melt the butter in the same pot, scraping up the browned bits on the bottom. Add the onions and bell pepper and cook, stirring occasionally, until the onions are deeply golden and jammy, 30-35 minutes - this long, patient cook is what gives the gravy its real flavor, not just a pale sauté.
- Stir in the garlic and cook until fragrant, about 1 minute. Sprinkle in the remaining 1/4 cup flour and stir constantly to coat the vegetables, cooking until the raw flour smell is gone and it turns a shade darker, about 2 minutes.
- Slowly whisk in the broth, scraping the pot bottom to dissolve any remaining browned bits, until the gravy is smooth with no lumps. Stir in the Worcestershire sauce, bay leaves, and thyme.
- Nestle the seared wings and any collected juices back into the pot, spooning gravy over the top so they're mostly submerged. Bring to a simmer, then cover and reduce the heat to low.
- Braise, turning the wings once halfway through, until the meat is fork-tender and pulling from the bone and reaches at least 175 F at the thickest part, 2 to 2.5 hours.
- Uncover, remove the bay leaves, and skim any excess fat from the surface. If the gravy is thinner than you like, simmer uncovered 5-8 minutes to thicken; if too thick, loosen with a splash of broth.
- Taste the gravy and adjust salt and pepper. Plate the wings smothered in onion gravy, with rice or mashed potatoes alongside to catch the extra.
