How it's cooked (8 steps)

  1. Melt the butter in a large, deep skillet or Dutch oven over medium-high heat. Add the kielbasa coins in a single layer and sear, undisturbed at first, until deeply browned on both sides, 4-5 minutes total; transfer to a plate.
  2. Add the onion to the rendered drippings and cook, stirring occasionally, until softened and golden at the edges, 5-6 minutes. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the bell pepper and cook, stirring, until just beginning to soften, 2-3 minutes.
  4. Add the cabbage in two batches, tossing each batch in the fat and letting it wilt down before adding the next, about 4 minutes total.
  5. Pour in the chicken broth and stir in the smoked paprika, cayenne, 1 teaspoon salt, and black pepper, scraping up any browned bits from the bottom of the pan.
  6. Cover and cook, stirring once halfway through, until the cabbage is mostly tender but still has a slight bite, 8-10 minutes.
  7. Return the kielbasa and any accumulated juices to the skillet. Uncover and cook, stirring occasionally, until the liquid has reduced to a light glaze coating the cabbage and the cabbage is fully tender, 5-6 minutes.
  8. Remove from the heat and stir in the apple cider vinegar. Taste and add more salt if needed, scatter the green onions over the top, and serve straight from the skillet.
