How it's cooked (8 steps)

  1. In a large bowl, toss the sliced portobellos with 1 tablespoon of the olive oil, the soy sauce, cumin, smoked paprika, chili powder, and 1/2 teaspoon of the salt. Let stand at room temperature 10 minutes while you prep the vegetables.
  2. While the mushrooms marinate, slice the bell peppers and onion into 1/4-inch strips and mince the garlic.
  3. Heat 1 tablespoon olive oil in a large cast-iron or heavy skillet over high heat until shimmering. Add the mushrooms in a single layer and sear undisturbed until deeply browned on the first side, 4-5 minutes, then flip and sear until browned on the second side and no longer releasing liquid, 3-4 minutes more. Transfer to a plate.
  4. Add the remaining 1 tablespoon olive oil to the same skillet over medium-high heat. Add the bell peppers and onion and cook, stirring occasionally, until softened and charred at the edges, 7-8 minutes.
  5. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds.
  6. Return the mushrooms to the skillet, sprinkle with the remaining 1/2 teaspoon salt, and toss over the heat until warmed through, about 1 minute. Remove from heat, squeeze in the lime juice, and toss once more.
  7. Warm the tortillas directly over a gas flame or in a dry skillet, 20-30 seconds per side, until pliable and lightly charred in spots.
  8. Fill each warm tortilla with the mushroom and pepper mixture, then top with cotija, cilantro, and avocado. Serve right away.
