How it's cooked (8 steps)

  1. Pat the shrimp very dry with paper towels, then toss in a bowl with 1 tablespoon of the Cajun seasoning until evenly coated; set aside while you start the sausage.
  2. Heat 1 tablespoon of the butter and the olive oil in a large heavy skillet (cast iron works well) over medium-high heat. Add the sausage coins in a single layer and cook undisturbed until deeply browned on the first side, 3-4 minutes, then flip and brown the second side, 2-3 minutes. Transfer the sausage to a plate.
  3. Add the bell pepper and onion to the same skillet and cook, stirring occasionally, until the onion is softened and the edges of the peppers are lightly charred, 5-6 minutes.
  4. Add the garlic and the remaining 1 tablespoon Cajun seasoning to the vegetables and stir until fragrant, about 30 seconds.
  5. Pour in the chicken broth and Worcestershire sauce, scraping up the browned bits from the bottom of the pan, then let it come to a simmer and reduce by about half, 2-3 minutes.
  6. Push the vegetables to the edges of the skillet, add the remaining 1 tablespoon butter to the center, and once melted add the shrimp in a single layer. Cook until opaque and just curled into a C-shape, about 2 minutes per side, 4 minutes total.
  7. Return the sausage to the skillet, sprinkle with the salt, and toss everything together until the sausage is heated through and the shrimp reach 145F internal, about 1 minute.
  8. Remove from heat, scatter with the parsley, and serve immediately with lemon wedges for squeezing over the top.
