How it's cooked (11 steps)
- Heat the oven to 375°F and line a rimmed sheet pan with foil. In a small bowl, stir together the breadcrumbs and milk; set aside to soften while you start the onion, about 5 minutes.
- Warm the olive oil in a small skillet over medium heat. Add the grated onion and garlic and cook, stirring often, until the onion is soft and no longer sharp-smelling, about 4 minutes. Scrape into a large mixing bowl and let cool for a few minutes so it doesn't scramble the egg.
- Add the softened breadcrumb mixture, egg, Worcestershire sauce, salt, and pepper to the cooled onion; stir with a fork until evenly combined.
- Add the ground turkey and mix with your hands just until no streaks of turkey remain — stop as soon as the mixture looks uniform, since overmixing makes the loaf dense and springy instead of tender.
- Turn the mixture out onto the center of the prepared sheet pan and shape into a free-form loaf about 8 inches long, 4 inches wide, and 2 inches tall — an open loaf on a sheet pan lets fat render away and the sides caramelize, instead of steaming in a loaf pan.
- Whisk the ketchup, brown sugar, and vinegar together in a small bowl, then brush half the glaze evenly over the top and sides of the loaf.
- Bake the loaf until just beginning to firm and lightly set on top, about 20 minutes.
- While the meatloaf bakes, toss the green beans with the remaining olive oil and a pinch of salt in a medium bowl.
- Scatter the green beans around the loaf on the sheet pan, brush the remaining glaze over the meatloaf, and return to the oven. Bake until the beans are tender-crisp and the meatloaf reaches 165°F on an instant-read thermometer, 18-20 minutes.
- Let the meatloaf rest on the pan for 10 minutes before slicing — this keeps the juices in the loaf instead of on the cutting board.
- Slice the meatloaf and serve with the roasted green beans alongside.
