How it's cooked (10 steps)
- Preheat the oven to 425 F and line a large rimmed sheet pan with foil or parchment for easy cleanup.
- On the sheet pan, toss the broccoli with 1 tablespoon of the olive oil, 1/2 teaspoon of the salt, and the black pepper; spread in a single layer and roast until just starting to brown at the edges, 8-10 minutes.
- Meanwhile, pat the salmon fillets dry and season both sides with the remaining 1/4 teaspoon salt.
- In a small saucepan, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, and cornstarch.
- Bring the sauce to a simmer over medium heat, whisking often, until thickened enough to coat a spoon, 3-4 minutes; remove from heat and set aside 3 tablespoons for serving.
- Push the broccoli to the edges of the pan and nestle the salmon fillets, skin-side down, in the center; brush each fillet with the remaining 1 tablespoon olive oil.
- Spoon the glaze generously over the salmon and broccoli.
- Return the pan to the oven and roast until the salmon is just opaque and flakes easily at the thickest part, internal temperature 125-130 F, tenting the broccoli edges with foil if they're browning too fast, 8-10 minutes.
- Switch the oven to broil and broil until the glaze is bubbling and lightly caramelized at the edges, 1-2 minutes, watching closely so it doesn't burn.
- Drizzle the salmon and broccoli with the reserved glaze and the sesame oil, then scatter with sesame seeds and green onions before serving.
