How it's cooked (8 steps)

  1. In a large bowl, whisk together the olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and pepper to make the marinade.
  2. Toss the chicken with half the marinade in the bowl and set aside at room temperature for 15 minutes while the oven heats to 425°F; toss the peppers and onion with the remaining marinade directly on a rimmed sheet pan.
  3. Spread the peppers and onion in a single layer and roast for 10 minutes to jump-start their moisture release, so the chicken won't steam once it's added.
  4. Push the vegetables to the edges of the pan, add the marinated chicken in a single layer in the center, and roast until the chicken reaches 165°F and the vegetables are tender with lightly charred edges, 12 to 15 minutes.
  5. Switch the oven to broil and cook 2 to 3 minutes more, watching closely, until the chicken and vegetables pick up deep char at the edges.
  6. Pull the pan from the oven and let the chicken and vegetables rest, loosely tented with foil, for 5 minutes so the juices settle.
  7. While the chicken rests, warm the tortillas in a dry skillet or directly over a gas flame until lightly spotted, about 30 seconds per side, and wrap them in a towel to keep warm.
  8. Squeeze fresh lime over the chicken and vegetables, scatter with the cilantro, and serve in the warm tortillas with extra lime wedges.
