How it's cooked (8 steps)

  1. Preheat the oven to 425F. On a rimmed sheet pan, toss the potatoes with 2 tablespoons of the olive oil, half the ranch seasoning, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Spread cut side down in a single layer and roast 15 minutes to give them a head start.
  2. Meanwhile, pat the chicken thighs dry and toss with the remaining 1 tablespoon olive oil, the remaining ranch seasoning, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon pepper.
  3. Push the potatoes to the edges of the pan and nestle the chicken thighs skin side up in the center. Roast until an instant-read thermometer inserted in the thickest thigh reads 165F and the potatoes are fork-tender, 28-32 minutes.
  4. While the chicken roasts, combine the buffalo sauce, butter, honey, and garlic in a small saucepan over medium heat; simmer, stirring occasionally, until glossy and slightly thickened, 3-4 minutes.
  5. Remove the pan from the oven and brush the chicken thighs generously with about half the buffalo glaze.
  6. Switch the oven to broil. Broil until the glaze is bubbling and lightly caramelized at the edges, 2-3 minutes, watching closely so it doesn't scorch.
  7. Transfer the chicken to a plate and let rest 5 minutes to finish coming up to temperature. While it rests, toss the potatoes still on the pan in the drippings and the remaining buffalo glaze.
  8. Plate the chicken and potatoes together, drizzle everything with the ranch dressing, and scatter the celery and chives on top before serving.
