How it's cooked (8 steps)
- Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- Toss the zucchini, bell peppers, red onion, and cherry tomatoes with 3 tablespoons of the olive oil, the oregano, salt, and pepper directly on the sheet pan, then spread into a single layer.
- Roast until the vegetables begin to soften and blister at the edges, 15-18 minutes.
- While the vegetables roast, whisk together the remaining olive oil, minced garlic, lemon zest, and lemon juice in a small bowl to make the dressing.
- Remove the pan and push the vegetables to one side; nestle the halloumi slices onto the open space, then brush the halloumi with a spoonful of the dressing.
- Return the pan to the oven and roast until the vegetables are caramelized and tender and the halloumi is golden at the edges, 10-12 minutes.
- Transfer everything to a platter.
- Drizzle with the remaining dressing, scatter the parsley and mint over top, sprinkle with red pepper flakes, and season with salt to taste. Serve warm.
