How it's cooked (9 steps)
- Toss the chicken with the salt and pepper in a bowl.
- Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken in a single layer and sear until deeply golden on the first side, 4-5 minutes, then flip and cook until golden and just cooked through, 3-4 minutes more. Transfer to a plate.
- Melt the butter in the same skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 3-4 minutes.
- Add the garlic and cook, stirring constantly, until fragrant, about 1 minute.
- Pour in the chicken broth, scraping up the browned bits from the bottom of the skillet with a wooden spoon. Bring to a simmer, then stir in the penne. Cover and simmer, stirring occasionally, until the pasta is nearly al dente and has absorbed most of the liquid, 12-14 minutes.
- Return the chicken and any collected juices to the skillet along with the cream and nutmeg.
- Simmer, uncovered, until the chicken reaches an internal temperature of 165 F and the sauce has thickened enough to coat the back of a spoon, 4-5 minutes.
- Remove the skillet from the heat and stir in the Parmesan until melted and smooth, then fold in the spinach until just wilted, about 1 minute.
- Taste and season with more salt if needed, scatter with parsley, and serve immediately.
