How it's cooked (8 steps)

  1. Bring a medium saucepan of water to a boil. Lower the eggs in with a spoon and boil for 6.5 minutes for a jammy, soft-set yolk. Transfer immediately to a bowl of ice water, let cool 5 minutes, then peel and set aside.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the ground pork and cook, breaking it into small crumbles with a spoon, until deeply browned, no longer pink, and reaching at least 160°F internally, 6-7 minutes.
  3. Add garlic and ginger to the pot and cook, stirring constantly, until fragrant, about 30 seconds.
  4. Pour in the chicken broth, scrape up any browned bits from the bottom, and bring to a gentle simmer.
  5. Ladle about 1/2 cup of the hot broth into a small bowl, whisk in the miso paste until smooth, then stir the mixture back into the pot along with the soy sauce and mirin. Simmer gently (do not let it boil hard) for 8-10 minutes to let the flavors meld.
  6. While the broth simmers, bring a separate pot of water to a boil and cook the ramen noodles until just tender, 3-4 minutes for fresh or per package for dried. Drain well.
  7. Stir the corn and butter into the broth until the butter is melted, 1 minute; taste and season with the salt as needed.
  8. Divide the noodles among four bowls, ladle the pork broth over top, nestle two egg halves into each bowl, and finish with scallions and a drizzle of sesame oil.
