How it's cooked (9 steps)
- Set an oven rack 6 inches from the broiler element and heat the broiler to high.
- In a large bowl, combine the breadcrumbs and milk; let sit until the milk is absorbed, about 2 minutes.
- Add the ground beef, egg, Parmesan, 2 of the minced garlic cloves, parsley, salt, and pepper to the bowl. Mix gently with your hands just until combined - overworking makes tough meatballs. Shape into 16 meatballs, about 2 tablespoons each.
- Heat the olive oil in a large skillet over medium-high heat. Sear the meatballs in two batches, turning occasionally, until deeply browned on all sides, 5-6 minutes per batch (they won't be cooked through); transfer to a plate.
- Reduce the heat to medium, add the remaining 2 garlic cloves to the skillet, and cook, stirring, until fragrant, about 30 seconds. Pour in the marinara sauce, scraping up any browned bits, and bring to a simmer.
- Return the meatballs to the skillet, nestle them into the sauce, cover, and simmer until cooked through and an instant-read thermometer reads 160°F, 10-12 minutes.
- While the meatballs simmer, split the hoagie rolls lengthwise (not all the way through) and spread the cut sides with the softened butter. Arrange cut side up on a baking sheet and broil until golden, 1-2 minutes, watching closely.
- Fill each toasted roll with 4 meatballs and a generous ladle of sauce, then top with 2 slices of provolone. Broil until the cheese is melted and bubbling, about 2 minutes.
- Serve immediately, spooning any extra sauce over the top.
